Ingredients

Units Scale
  • 2 tbsp unsalted butter, melted
  • 3 large eggs
  • 3/4 cup granulated sugar, divided
  • 1 tbsp vanilla extract
  • 1 and 1/4 cup whole milk
  • 1 tbsp orange zest
  • pinch of fine sea salt
  • 1 cup all-purpose flour
  • 2 cups mixed berries (raspberries, quartered strawberries, blueberries)
  • powdered sugar and vanilla ice cream to serve

Instructions

  1. Make the batter: Preheat oven to 350F. Add the butter to a baking dish and swirl to coat the sides. In a mixing bowl, whisk together the eggs, 1/2 cup sugar, vanilla, milk, zest, and salt until creamy and frothy. Add the flour 1/4 cup at a time and whisk until there are no more clumps.
