Waffles are so versatile and a great platform for just about any toppings. This crisp, cornmeal waffle is a lovely balance of savory and sweet and compliments the soft, sweet toppings. This waffle pays tribute to Elvis Presley who enjoyed peanut butter banana (and occasionally bacon) sandwiches. If you have a more intense sweet tooth, consider adding melted chocolate to the waffle. For the true Elvis experience, add a few strips of bacon to the waffle for some added crunch.

Ingredients for Elvis Waffles

Elvis Waffles

Cornmeal waffles are one of my favorite types of waffles because they're mostly savory and develop really crisp edges from the cornmeal. They make a great base for everything from sausage gravy to caramelized bananas.

Cornmeal Waffles

  • all-purpose flour
  • yellow cornmeal - finely ground.
  • light brown sugar
  • baking powder
  • baking soda
  • fine sea salt
  • plain Greek yogurt or sour cream
  • whole milk
  • eggs

Caramelized Bananas

  • unsalted butter
  • light brown sugar
  • maple syrup
  • Cognac - optional.
  • bananas

Waffle Toppings

  • natural creamy peanut butter - no sugar added peanut butter will drizzle much better over the finished waffles.
  • confectioners sugar - optional.

Here's what else you'll need:

  • 2 large mixing bowls
  • whisk
  • rubber spatula
  • medium skillet
  • Belgian waffle iron
  • cutting board and knife for bananas
  • tongs to remove waffles
  • measuring cups and spoons

How to Make Elvis Waffles

The waffle batter comes together quickly and you can easily make the caramelized bananas while the waffles are cooking. The waffle iron I use gets the waffles super crisp on the outside and fluffy on the inside. They are perfection in every bite!

Waffles

  1. Mix together the dry ingredients. In a separate bowl, mix together the wet ingredients. Combine the wet ingredients with the dry. Beat the egg whites then fold into the batter.
  2. Cook waffles until golden and slightly crisp.

Caramelized Bananas

  1. Add the butter, brown sugar and maple syrup to a hot sauté pan. When mixture begins to bubble, add the Cognac. Once the Cognac has evaporated, add the sliced bananas. Cook bananas until browned and soft.

Waffle Topping

  1. Drizzle a heaping spoonful of peanut butter across the top of each waffle (this is easier to do when the waffle is still warm). Place a spoonful of the caramelized banana sauce on top then dust with confectioners sugar.

Ingredients

Units Scale
  • 1 ¼ cups (160g) all-purpose flour
  • ¾ cup yellow cornmeal, finely ground
  • 1 tablespoon light brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1 cup plain Greek yogurt or sour cream
  • 1 cup whole milk
  • 4 large eggs, separated
  • 1 cup natural creamy peanut butter, garnish
  • confectioners sugar, garnish

Caramelized Bananas

  • 4 tbsp unsalted butter
  • ¼ cup packed light brown sugar
  • 2 tablespoon maple syrup
  • 1 tablespoon Cognac - optional
  • 2 ripe bananas, peeled and sliced diagonally into ½-inch thick pieces

Instructions

  1. In a large bowl, whisk together the flour, cornmeal, brown sugar, baking powder, baking soda and salt. In a separate bowl, mix together the Greek yogurt or sour cream, milk, melted butter and egg yolks. Combine the wet ingredients with the dry until fully incorporated. Using the whisk attachment on a standing mixer or a hand-held mixer, beat the egg whites until fluffy and slightly stiff. Fold into the batter.
  2. Heat your waffle iron and lightly spray with nonstick spray or brush with melted butter. Cook waffles until golden and slightly crisp.

Caramelized Bananas

  1. While waiting for the waffles to cook, heat a large sauté pan over medium heat. Add the butter, brown sugar and maple syrup and stir to combine. When mixture begins to bubble, add the Cognac. Once the Cognac has evaporated, add the sliced bananas. Cook bananas for about 1 to 2 minutes per side until browned and soft. Set aside.
  2. Once your waffles are cooked, drizzle a heaping spoonful of peanut butter across the top of each waffle (this is easier to do when the waffle is still warm). Place a spoonful of the caramelized banana sauce on top then dust with powdered sugar. Enjoy!
