Ingredients
Chimichurri
- 2 garlic cloves, minced
- 1 cup fresh mint, finely chopped
- 1 cup fresh parsley, finely chopped
- 1/2 tbsp red wine vinegar
- 1/4 cup extra virgin olive oil
Mojito sauce
- 1 tbsp extra virgin olive oil
- 1 shallot, minced
- 1/2 cup gold/dark rum (like Bacardi)
- 1/4 cup fresh lime juice
- 2 tbsp honey
- 2 tbsp unsalted butter
Lamb chops
- 10–12 lamb rib chops
- 1 tbsp extra virgin olive oil
- kosher salt + black pepper as needed
Instructions
- Make the chimichurri: In a small bowl, combine the garlic, herbs, vinegar, and olive oil. Mix well and set aside.
- Make the mojito sauce: Heat the olive oil in a skillet over medium-high heat. Add the shallot and cook until translucent, about 2 minutes. Pour in the rum and let it simmer for about 2 minutes to cook off the alcohol. Add the lime juice and honey, and continue cooking for another 2 minutes. Remove the skillet from the heat and stir in the butter until melted and smooth. Transfer the sauce to a bowl and set aside.
- Air fry the lamb chops: Preheat the air fryer to 400°F. Arrange the lamb chops in a single layer on a tray or plate and drizzle both sides with olive oil. Season evenly with salt and pepper. Lightly spray the air fryer basket with oil. Working in batches, place half of the lamb chops in a single layer in the basket. Cook for 3 minutes, then flip and cook for an additional 3 minutes. Transfer to a plate to rest while you cook the remaining lamb chops.
