How to make these air fryer lamb chops

These air fryer lamb chops come together quickly and cook up perfectly juicy with minimal effort. You’ll start by making a bright mojito-inspired sauce and a fresh chimichurri to layer on top, then finish with the lamb in the air fryer for a perfect mid-rare. It’s simple and streamlined but feels way more elevated than the time it takes.

1. Make the chimichurri

Stir together garlic, herbs, vinegar, and olive oil until it’s fresh, vibrant, and ready to go.

2. Make the rum sauce

Sauté the shallots, add the rum to cook off, then stir in lime and honey and finish with butter until silky.

3. Air fry the lamb chops

Season the lamb chops and air fry in batches until juicy, tender, and perfectly mid-rare.

4. Assemble

Pile the lamb onto a serving dish, spoon over the sauce, drizzle with chimichurri, and finish with fresh mint.

Servings and pairings

The rich, juicy lamb pairs beautifully with the bright, herby sauces, giving you a balance of flavors that works with everything from simple sides to something more styled and intentional. It’s flexible, crowd-pleasing, and has that perfect mix of comfort and freshness.

  • Dinner party main course – these lamb chops make a stunning main course. Serve them on a large platter with the sauce and chimichurri drizzled over the top for a shareable, centerpiece moment.
  • Date night at home – for a date night at home, they’re just as perfect, offering something a little elevated and impressive without requiring a ton of time or effort.

Side pairings:

  • Roasted potatoes
  • Grilled asparagus
  • Couscous with herbs
  • Simple arugula salad

Drink pairings:

  • Wine: Malbec — it has enough richness for the lamb but still lets the mint and lime flavors shine.
  • Beer: Pilsner — keeps things refreshing and cuts through the richness without competing with the bright sauce.
  • CocktailClassic mojito — Lean into the inspiration and serve the real thing alongside dinner. A classic mojito is a natural fit, echoing the mint, lime, and rum in the dish and tying everything together.
  • NA optionNo-jito — A sparkling lime and mint soda gives you that same fresh, citrusy lift without the alcohol.

Storage recommendations

Store any leftover lamb chops in an airtight container in the refrigerator for up to 3 days. Keep the chimichurri and mojito sauce in separate containers so everything stays fresh and vibrant.

To reheat, warm the lamb gently to avoid overcooking. You can use the air fryer or oven at a low temperature just until heated through, or quickly warm in a skillet over medium-low heat. Spoon the sauce over just before serving and add fresh chimichurri at the end to keep the flavors bright.

Description

Air frying lamb chops is one of the quickest, easiest ways to get something that feels really special on the table. The lamb cooks up perfectly mid-rare, paired with a bright rum-based mojito sauce layered with lime and mint. A spoonful of chimichurri at the end makes it feel instantly fresh and elevated.

Ingredients

Units Scale

Chimichurri

  • 2 garlic cloves, minced
  • 1 cup fresh mint, finely chopped
  • 1 cup fresh parsley, finely chopped
  • 1/2 tbsp red wine vinegar
  • 1/4 cup extra virgin olive oil

Mojito sauce

  • 1 tbsp extra virgin olive oil
  • 1 shallot, minced
  • 1/2 cup gold/dark rum (like Bacardi)
  • 1/4 cup fresh lime juice
  • 2 tbsp honey
  • 2 tbsp unsalted butter

Lamb chops

  • 1012 lamb rib chops
  • 1 tbsp extra virgin olive oil
  • kosher salt + black pepper as needed

Instructions

  1. Make the chimichurri: In a small bowl, combine the garlic, herbs, vinegar, and olive oil. Mix well and set aside.
  2. Make the mojito sauce: Heat the olive oil in a skillet over medium-high heat. Add the shallot and cook until translucent, about 2 minutes. Pour in the rum and let it simmer for about 2 minutes to cook off the alcohol. Add the lime juice and honey, and continue cooking for another 2 minutes. Remove the skillet from the heat and stir in the butter until melted and smooth. Transfer the sauce to a bowl and set aside.
  3. Air fry the lamb chops: Preheat the air fryer to 400°F. Arrange the lamb chops in a single layer on a tray or plate and drizzle both sides with olive oil. Season evenly with salt and pepper. Lightly spray the air fryer basket with oil. Working in batches, place half of the lamb chops in a single layer in the basket. Cook for 3 minutes, then flip and cook for an additional 3 minutes. Transfer to a plate to rest while you cook the remaining lamb chops.
  4. Assemble: Arrange the lamb chops on a serving dish. Spoon the mojito-inspired rum sauce over the top, then drizzle with chimichurri. Garnish with fresh mint leaves and serve. Enjoy!
