What Mezcal Brings to the Table
One of the reasons vodka works so well in pasta alla vodka is that it helps emulsify the tomatoes and cream, creating that signature silky texture. But flavor-wise, vodka is fairly neutral. Mezcal does the same job while bringing its own smoky character to the party. Since a glass of mezcal is one of my favorite things to order at a bar, swapping it into pasta felt like a natural next step. The result is a sauce that’s just as creamy, but with a little more personality.
Everything you need to make this recipe
The ingredient list is simple, but each one pulls its weight. Together they create a sauce that is smoky, spicy, creamy, and deeply satisfying. If you like a little extra heat, a pinch of red pepper flakes is always welcome.
- pasta: Rotini, cavatappi, rigatoni, or fusilli are all great choices because they catch every bit of the sauce. That said, this is a pasta recipe, not a pasta rule. Use what you love!
- Calabrian chili oil + shallot + garlic + tomato paste + sugar + mezcal: This is where all the magic happens. The chili oil brings a slow, lingering heat while the mezcal adds its signature smokiness. The tomato paste caramelizes into something rich and jammy, tying everything together.
- heavy cream + butter + Parmesan: The finishing touch. These ingredients melt into the sauce and transform it into something silky, glossy, and deeply comforting.
Kitchen equipment needed:
- large pot
- strainer
- cutting board + chef’s knife
- large skillet

How to make this spicy pasta alla mezcal
If you’ve made pasta alla vodka before, this recipe will feel instantly familiar. The process is nearly identical, but the mezcal adds a smoky depth that makes the finished sauce feel a little more special. In just four simple steps, you’ll have a rich and creamy pasta on the table in under an hour.
1. Cook the pasta
Cook the pasta in well salted water until al dente, reserving some pasta water before draining.
2. Create the sauce base
Sauté the shallot and garlic in the chili oil until soft and fragrant.
3. Finish the sauce
Cook the tomato paste until dark and concentrated, then stir in the mezcal and cream to create a rich, smoky sauce.
4. Mix the pasta with the sauce
Toss the pasta with the sauce, butter, Parmesan, and a splash of pasta water until glossy and well coated, then serve with more Parmesan and fresh basil.

Servings and pairings
This pasta is rich, smoky, and creamy, with just enough heat to keep things interesting. It feels special enough for entertaining but easy enough for a weeknight, making it one of those recipes that works for almost any occasion.
- Weeknight dinner – The sauce comes together quickly and feels far more luxurious than the effort required. Perfect for when you want something cozy but a little unexpected.

- Dinner party main course – Serve it family-style with plenty of Parmesan, fresh basil, and a big green salad on the side. It’s guaranteed to disappear quickly.
Side pairings:
- Garlic bread
- Simple arugula salad
- Roasted broccolini

Drink pairings:
- Wine: Sangiovese — Its acidity complements the tomatoes beautifully and balances the creamy sauce.
- Beer: Pilsner — Crisp, refreshing, and perfect alongside the smoky, spicy flavors.
- Cocktail: Mezcal Margarita — If you’re already opening a bottle of mezcal, this is the perfect excuse to pour yourself a cocktail to match.
- NA option: Sparkling lime water — The bright citrus helps cut through the richness of the sauce while keeping things refreshing.

Storage recommendations
Leftover pasta alla mezcal keeps well in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it sits, which is completely normal.
To reheat, add the pasta to a skillet over low heat with a splash of water, cream, or milk and stir until the sauce loosens and becomes silky again. You can also microwave it in 30-second intervals, stirring between each, until warmed through.
Recipe FAQs
Can I use tequila instead of mezcal?
Yes, but the flavor will be different. Tequila will still add richness to the sauce, but mezcal is what gives this recipe its signature smoky flavor. If you use tequila, you’ll end up with something closer to a traditional pasta alla vodka.
What can I substitute for heavy cream?
Heavy cream gives the sauce its rich, silky texture, but there are a few alternatives that work well. Half-and-half can be used for a lighter sauce, while full-fat coconut milk will keep it creamy and dairy-free. Just keep in mind that lighter substitutes may create a thinner sauce and slightly change the final flavor.
What protein pairs well with pasta alla mezcal?
This pasta is rich, smoky, and creamy, so it pairs especially well with simple proteins. Grilled shrimp, seared chicken, Italian sausage, or even crispy chickpeas are all great options. If you’re serving it as part of a larger meal, a piece of grilled fish or steak on the side also works beautifully.
What if I can’t find Calabrian chili oil?
No Calabrian chili oil, no problem. You can substitute regular olive oil and add a pinch of red pepper flakes. The sauce will still be rich, smoky, and delicious, though Calabrian chiles do add a subtle fruity heat that’s hard to replicate exactly.

Spicy Pasta Alla Mezcal
- Total Time: 45 minutes
- Yield: 6 servings 1x
Description
Spicy Pasta alla Mezcal is a smoky twist on Pasta alla Vodka. Mezcal tequila brings a subtle charred flavor that melts into the rich, silky tomato sauce, making it taste a little deeper and a little more intriguing than pasta alla vodka. It‘s cozy, creamy, and just different enough to keep you coming back for another bite.
Ingredients
- 16 oz dried pasta of choice (I recommend rotini, cavatappi, rigatoni or fusilli)
- 1/4 cup Calabrian chili oil
- 1 large shallot, minced
- 2 cloves garlic, minced
- 1/2 cup tomato paste
- 1/2 tbsp granulated sugar
- 1/4 cup mezcal of choice (I recommend Del Maguey Vida)
- 1 cup heavy cream
- 2 tbsp unsalted butter
- 1 cup grated Parmesan cheese, plus more for garnish
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Reserve 1 cup of pasta water then drain.
- Create the sauce base: While the pasta is cooking, heat the chili oil in a large skillet over medium heat. Add the shallot and garlic and cook until softened, about 5 minutes.
- Finish the sauce: Add the tomato paste and sugar and cook while stirring often for about 3 minutes until it turns very dark red in color. Add the mezcal and let it sizzle and cook off, about 1 minute. Pour in the heavy cream and let simmer for a few minutes. Reduce the heat to low.
- Mix the pasta with the sauce: Add the cooked pasta to the sauce along with 1/2 cup of the reserved pasta water, butter, and Parmesan cheese. Mix until the pasta is evenly coated with sauce and add more pasta water if it needs thinned out. Serve with grated Parmesan cheese and fresh basil. Enjoy!
